Hi again… well, I made them again, this time around, I measured the amount of filling I made – which came out to about 30 Tablespoons. So, I divided the dough accordingly. This time, they were much better looking and even more delicious! My husband has a Lebanese woman who comes into where he works – she’s a caterer. She brings him Spinach pies in all the time. My husband says that these pies are just as good, if not better, and this woman’s pies are delicious too! Thanks so much!

Thanks for the comment. Here’s the deal, sometimes you’ll end up with left over spinach and sometimes left over dough. It all depends on how much you fill them. I would say it should yield between 15-20, just try to fill them more evenly and maybe a little less

Hi there! I made this today and they were delicious. Seeing as I haven’t made bread dough in 10 years, they weren’t the prettiest to look at, but they were yummy!
I do have a question though – how many does this recipe yield? I rolled out 20 balls but seemed to be able to (unevenly) fill 15. Given the fact that it’s the first time I made them, I know they were filled unevenly. But if you could give me an idea of how many to make, that would sure help! Thanks again for a delicious recipe!

hey i was wondering, do some arabic bakeries make fatayer with zatar? i’ve had zatar mixed with olive and dipped khubus in it, but ive had pastries b4 with the spinach mixture inside the dough nd i swear it tasted like it was mixed with zatar… maybe its a khaliji thing?

The reason I use …
The reason I use olive oil is because it adds a nice shine to the pies and also helps them to brown nicely. And yes you can just do it in beginning.

Sometimes, the pies open because the dough expands, you can try making them in the calzone shape as well and twist the edges closed like a pizza pie and that usually works really well

o dede. Yup, it’s the gal with a million questions! I finally made the spinch pies and i must say…the spinach mixture was to die for! Loved it sooooo much! Who would’ve thought adding tomatoes to the mixture would make it unbelievably delicious! Thanx soo much! I had one slight problem when i made them. My dough kept opening a bit and some of my spinach would seep out, even when i sealed the dough real good and tight. My dough was’nt too thin or stuffed too much. What do u think happened?

o and thanks for the comments. Well I would recommend using fresh tomatoes. The canned ones have to much liquid and the fresh ones add a wonderful element to the spinach. Yes I do use bleached all-purpose flour, sometimes I like to add a cup of wheat flour to make it more healthy but generally I do use the bleached all-purpose flour.

The dough will cook through b/c you are rolling it out and it is not that thick when you do, that way it will cook all the way
